Sweet Chilli Crispy Dumplings

Pleated pork and cabbage dumplings filled with minced pork, Chinese cabbage, ginger, garlic and spring onion, steamed first and then fried flat-side down until golden and crackly underneath. We then toss them in a sticky sweet chilli glaze that clings to the wrappers. The filling is juicy and savoury, and the glaze brings a sweet, gentle heat with a little tang.

They come in a small bowl, glossy and hot, finished with spring onion, sesame seeds and a few slices of fresh red chilli, plus a dipping dish of black vinegar soy. They're an easy sharing starter before a noodle bowl. Unlike our crisp-fried ginger dumplings, these are soft on top with a sticky glaze.
