Mozzarella & Basil Garlic Bread

A round of thin, pizza-style dough brushed with garlic oil, covered edge to edge in fresh mozzarella and baked in a very hot oven until the cheese is molten and spotted brown. Fresh basil leaves, a pinch of sea salt and a little extra-virgin olive oil go on as it comes out. It's soft and stretchy with a crisp, bubbly crust and a mild, milky flavour.

It's cut into slices on a round board so the cheese pulls as you lift each one. It's great for sharing before pasta or with drinks. Of our garlic breads, this is the most like a pizza, with fresh mozzarella and basil giving a light, classic Italian flavour rather than a heavy, buttery one.
